The grain market has remained steady, although some ‘new’ introductions are gaining in popularity as manufacturers scramble to keep pace with health trends. These new players are actually ancient grains revisited, or ‘heritage grains,’ which have remained unchanged for hundreds of years, but which consumers have rediscovered. Varieties such as quinoa, teff, spelt, millet and kamut are appearing in more products.
