Per capita consumption of red meat might have declined, but consumer demand for poultry and other sources of animal protein have replaced it as a perceived healthier option. Even while per capita consumption has declined, overall dollar sales have increased due to value-added product introductions. Packaged Facts estimates retail sales of meat and poultry products to grow to $98.3 billion in the U.S. by 2017. And while dollar sales of fish and seafood are up, volume is down. Total retail sales of fish and seafood are projected to grow to $17.1 billion by 2017.
Prepackaged meal components or ready-to-eat options continue to drive the category as a whole, with one analytical group recently predicting the U.S. market for meat, poultry and seafood packaging to grow at a compound annual growth rate of 4.7% through 2019. Strict regulations for food safety requires proper processing equipment for pasteurizing product packages and rapid chilling are a must. In addition, rapid processing of these different proteins naturally requires a different approach, as the more delicate proteins within the seafood category for example, demand a gentle yet rapid processing system that won’t damage product.
